Chef Lino Scarallo's Reinforcement Risotto, Palazzo Petrucci (Na), Adopt a Chef


Michelin Chef Lino Scarallo mixes his love for Neapolitan traditions, combines it with Christmas at the Scarallo household, and then – as he is known to do – adds a twist.


Here we are - Scarallo's fantast first - Reinforcement Risotto.  The chef’s take on the classic insalata di rinforzo or reinforcement salad. The traditional recipe  found on Christmas Eve dinner tables around Campania includes ingredients such as cauliflower, red and green peppers, anchovies, capers and olives.  Scarallo decided to take these ingredients and make a risotto.

However, with a twist.

Here I had a chance to talk to the chef about this tradition.  He tells me that the ingredients are designed to reinforce…give one energy.  Some recipes include marinated vegetables.  Leftovers can be served the day after as a side dish to another Christmas classic – fried baccala’.
