A Little Bread, a Little Wine, and Prosciutto San Daniele DOP


Prosciutto di San Daniele DOP is one of Italy's prized possesions.  And though it is not from Campania, but Northern Central Italy, it found its way to bella Napoli last weekend for a tasting to celebrate 50 years of the Prosciutto di San Danielle Consortuim.  Città del Gusto Napoli was the host of a prosciutto and pane pairing. Which Campania bread would bring out the particular flavors of this particular ham.  Particular because for a ham to become Prosciutto di San Daniele DOP (Protected Denomination of Origin), it must meet three criterea:


One: The thighs must come exclusively from pigs bred in ten regions of Northern Central Italy (Friuli Venezia Giulia, Veneto, Lombardy, Piedmont, Emilia Romagna, Tuscany, Lazio, Abruzzo, Marche, Umbria).
Two:Production of fresh meat mst be held in the town of Fruili where sea salt is used to preserve the meat, no chemical aditives or preservatives.



And three: Ageing must be in the town of San Daniele di Fruili, where the climatic conditions are perfect to produce...no, develop this unique ham known the world over


 Rose colored which contrasts beautifully with the white flavorful  fat of the ham.  A delicate persistent aroma, as delicate as its flavor.

So I tried three opened faced sandwhiches to see how san daniele's flavors would contrast with the crunchy lightly sapid Pane di San Sebastiano, the flavorful Pane a Canestrella, or downtown Napoli's own aromatic Pane  Cafone.  Each bread high lighted the proscutto's flavor and a quick survey at my table shown that everyone had their own favorite.  A question of taste, so to speak.  









It wouldn't be a tasting, though, without wines.  And we tried two. a fresh rose from Tenuta San Francesco and a Lacrima Christi di Vesuvio from Sorrentino Vinarium.

Chefs in Progress - Città del Gusto, Napoli


Exam day, Città del Gusto, Napoli.  Exam day for 14 students who had just completed a three month intensive Professione Cuoco course.  !4 young students on the road to fulfilling their dream of being a chef. After an intense written exam the day before, the test on this particular day was for each student to prepare one dish. One dish that would show their culinary knowledge, crativity, and presentation.  It was the first time for many, and I felt honred to be able to sit at the judges table.  to not only  help evaluate and rate each dish,  but to also  to provide suggestions, tips, and encouragement to 14 young chefs in progress.

I have fond memories of when this dish was brought to the table and placed in front of us.  How Pierluigi explained the dish, the preparation, his thoughts, his motivation.  This had to be a nerve racking moment for him as well as all of the students who were presenting their dishes thta afternoon.  Nerve racking but exciting at the same time.

Once again my task was to help evaluate, advise, and give confidence to 14 budding young chefs.  I didn't have time to try all the dishes.  I wish I had.  Who knows?  I could of witnessed the beginnings of a future Master Chef!

Bollicine D'Italia 2012 - Citta' Del Gusto Napoli


Saturday night sparkled as Citta' del Gusto Napoli and Gambero Rosso presented some of the best sparkling Italian wines.  25 wines from regions such as Alto Adige, Campania, Lombardy, Piedmont, Trentino, Sardinia, and Veneto were on hand for spumante lovers ready for the holiday season.  As usual, a wide range of food was available to pair the wines with.  Breads by Michele Leo, appetizers by Chef Giovanni Pastore, mozzarella DOP provided by the Consorzio tutela mozzerella di bufala campana DOP, Sweets?  Of course!  Pasticceria Pepe with panettone, the Perugina  with their chocolate, and torroni and croccantini by Torronificio Vincenzo Di Iorio.

BereBene Low Cost 2012-Città del Gusto Napoli


Quality wines on a budget?  Why not?  Gambero Rosso has been publishing a guide for the last 22 years that shares what they believe to be the best 3000 or so  wines for under 8 Euro ish a bottle. And Città del Gusto Napoli had about 50 on hand last Sunday evening for wine enthusiasts to try and see for themselves as they snacked on a wide array of finger foods and pizza...

What a Drink Experience ! -Città del Gusto Napoli

We met one Thursday evening at Città del Gusto for a real drink experience. Sebastiano Pucella…barchef, mixologist with a creative mind and simpatico personality. We met there for one of Città del Gusto’s Thursday night Drink Experience cocktail nights. And it was here that I got a chance to watch Sebastiano prepare several cocktails step by step.

He started off with cocktails based on Negroni (gin, campari, and red vermouth). Unstructured Negroni-tini Evolving was the first. A velvety drink with cinnamon alcolato lightly sprayed on top. Next, Negroni with Orange Evanescent with a foamy topping. He made a Bevuta di Mela Annurca for me complete with fresh apple, mela, juice that he makes himself daily. Here, Sebastiano told me, is where the bar meets classic cooking. Lemon peel, cinnamon, and ginger were other fresh ingredients that he added to the mix.

There were a couple others he wanted me to see. Daiquiri Smokin Cammomila. Entertaining to watch Sebastiano light up and smoke tea in the decanter. And finally his Tobacco Connection, a revisited version of the classic cocktail French Connection from the 1940s.

A real drink experience because here,  I got the chance to get an understanding of what goes into to making a cocktail drink. And that evening I left Città del Gusto Napoli with a new appreciation for those ‘behind the bar’. Pucella didn’t have to toss glasses in the air or dance to music. He held my attention with his passion and his patience.

Fantastic Firsts: Paccheri di Gragnano con Sugo Di Astice e Pomodorini del Piennolo by Chef Giovanni Pastore


During a recent trip to Città del Gusto Napoli, I tried this dish prepared by chef Giovanni Pastore. He used Canadian lobsters alongside piennolo tomatoes to come up with a fantastic international first course. Here is the recipe.

Ingredients for 4 people:
Paccheri di Gragnano (pasta) 400 gr.
Piennolo tomatoes with organic sauce 300 gr.
Canadian lobster nr. 2
Extra virgin olive oil
2 cloves of garlic
Red pepper
Parsley
White wine (falanghina is reccomended) 1 glass
Salt to taste

Procedure:
First, brown the garlic in extra virgin olive oil along with the red pepper flakes.. Add the lobster which has beencut in half and cook well. Deglaze with white wine, add the tomatoes (diced), salt and cook for 10 minutes.
In the meantime, cook the pasta al dente in salted boiling water. Toss the paccheri in the lobster sauce..
Serve with half a lobster for each serving along with chopped parsley..

Città del Gusto Napoli Threw a Party...And Campania Came

October 31st...Instead of trick or treating, I,  along with about 500 Campania wine lovers attended the Galà del Vino Campano

The idea was Paolo De Cristofaro's, head of Gambero Rosso's Campania section.  His plan was to celebrate Campania wines.  So he called a few friends to discuss  Campania and its wines in general. Friends such as Daniele Cernilli, Luigi Salerno, Carlo Flamini, Nicola Venditti, Michele Farro, and Salvatore Avallone...

He invited a few wineries...34 to be exact.  They brought some wine...43 different labels.
He invited AIS Campania to help during the wine tastings and seminars.  Four seminars, each with a different theme, different wines to taste and discuss.

He called on Michele Leo and Gennaro Sarno to serve up some amazing pizza.  And they did.

My plan for this event was simple.  To have fun.  To mingle with old friends, many whom I haven't seen since Vinitaly like Gaetano Bove from Tenuta San Francesco, Maria Felicia Brini from Masseria Felicia.  To celebrate Gambero Rosso recognition with my Vineyard Hopping companions such as Giovanni Ascione, Flavio Castaldo, Antonella Lonardo, Feudi di San Gregorio's Alessandro Palmieri, Manuela Piancastelli, the entire gang from Mastroberadino -Piero Mastroberardino, Dario Pennino, Massimo Di Renzo, and Antonio Dente, Il Cancelliere, Villa Raiano.  To try wines that I hadn't tried before from wineries such as Pietracupa, Ferrara Benito, Villa Diamonte and Sanpaolo.

To laugh, discuss, observe, learn, admire, enjoy myself.  To put away my camera, for a little while and celebrate with Campania.  And to silently, if not impatiently, prepare for future Città del Gusto Napoli events.

Trento DOC-The Night That Rocked

October 4th...the night Trentino rocked Città Del Gusto in Naples.  The evening began with a guided spumante tasting with Gambero Rosso's Daniele Cernilli and Paolo De Cristofaro. Everything you wanted to know about sparkling rosè but were afraid to ask...Then it was off to the 'piazza' to try wines from 31 wineries and taste fantastic 'finger foods' while listening to music. A real festa! 

But then at Città del Gusto...it always is...

Gala del Vino Campano - Citta del Gusto Napoli, October 31



It's going to be a party and it's going to be big...no..huge.  A party to celebrate Campania wines.  A party to present those wines which recieved the due biccheri colorati or the tre bicchieri ratings in Gambero Rosso's Vini d'Italia 2011 Guide.

An event with over 40 wineries, wine tastings, seminars, and much much more.

Here is a brief rundown of the program...

1600 hrs:  A presentation/meeting to discuss the 'state of' Campania wines
1800 - 2200 hrs: Wine tasting stands will be open.
1800- 2200 hrs: Guided wine tastings and seminars (reservation only...details here)

Viva La France-Viva L'Italia at Città del Gusto Rome

On the anniversary of the National Day of France, Wednesday, July 14, Gambero Rosso Roma has organized a special event.
