Three Amigos - One Dish

A few weeks ago, I attended a jam session with countless top chefs in Marenna's kitchen.  I wrote abut it here. The energy level was electrifying, dynamic, lively and contagious.  It was hard not to get caught up in the action.
But I needed a break, and with a glass of Cutizzi Greco di Tufo DOCG 2011 in hand, I walked to the back corner our Marenna's enormous kitchen and leaned against the wall.
And that's when I noticed them...the Three Amigos.  Three chefs, without their chef's whites, quietly discussing what would be their creation.  I tiptoed over  to easedrop a little.  And for a moment, all the chaos around me was forgotten.  It was almost as if that little corner of Marenna became a kitchen in any of these top Campania chefs homes.

Captivated by the camaraderie...
Charmed by the colors...
Curious about the flavors...



Codfish cooked at low temperature with 'broccoli' (collard greens), and Salicornia with salt cod  water with emulsified lemon...

Buenos...
Brilliant
Buon Appetito...
