In my few short years of visiting Campania's restaurants I find myself spending less time at the table and more time in the kitchen. It is there where I can silently observe the crucial communication between the dining room and kitchen staff. I recently had a chance to hang out in one of the most popular kitchens in the world and sit in on the pre game briefing at Don Alfonso 1890. To observe in silence and in admiration the beginning of a busy Friday lunch service.
